This homemade chicken pomodoro is light, easy, delicious, and comes together in under 30 minutes from start to finish!
This chicken dish is one of my favorite recipes to make every single week. It is made with juice and tender chicken breast that is seasoned and cooked to perfection that is cooked in tomato sauce.
Once you start making this meal, it will turn into a regular meal rotation in your house! Making tomato sauce from scratch has always been the way to go in my house since you get so many flavors from fresh produce.
This chicken recipe comes together in just one pan and gives you a delicious dinner or lunch in 30 minutes!

What is chicken pomodoro?
Chicken Pomodoro is an Italian chicken dish made with tender chicken breast smothered in fresh tomato sauce made with cherry tomatoes and fresh herbs.
This dish feels fancy and restaurant quality dish, but is actually super easy to make and uses simple ingredients.
Ingredients
Before you start to make this recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

Chicken- use either chicken thighs or chicken breast for this recipe. we used chicken breast for this recipe, feel free to use whatever chicken part that you like most. We used boneless chicken breasts.
Olive oil- use extra virgin olive oil for the best flavor. If you don't want to use olive oil, you can use avocado oil, canola oil, or vegetable oil!
Kosher salt– we used kosher salt in this recipe. You can use sea salt or flakey salt as well.
Black pepper- for flavor. Adjust the black pepper to your personal liking.
Garlic powder- use your favorite brand of garlic powder. You will need 1 teaspoon for this recipe.
Garlic- freshly minced garlic will give you the best flavor for any dish. I highly recommend not using frozen minced garlic.
White wine- you can use your favorite white wine or the one you have available.
Onion- chop a whole onion into small pieces and fry them in the olive oil until they are soft. You can use red onion if you don't have white onion.
Basil- fresh basil will give you the best flavor and aroma for this dish. You will need to cut the basil into ribbons.
Cherry tomatoes- use the best quality cherry tomatoes that you can find. Cherry grape tomatoes are extra flavorful, also cherry Roma tomatoes are very flavorful.
Chicken broth- use either homemade or store-bought chicken broth for this. You can swap it with vegetable broth as well.
Instructions
Season the chicken on both sides with salt, garlic powder, and black pepper. Add a drizzle of olive oil to the pan and heat it over medium-high heat.
Add the chicken and cook it on each side for about 5 minutes on each side over medium-high heat. Don't disturb the chicken and let it cook without moving it to allow it to develop a crust on the outside.
If you need, cook the chicken in batches to allow the chicken to cook properly. Remove the chicken from the skillet and set aside.
Reduce the heat to medium heat. In the same pan, add 2 tablespoon of olive oil and saute the chopped onion mixing constantly with a wooden spoon until it's soft, tender, and golden brown.
Add the minced garlic and saute for another minute or so until it's cooked.
Now, add the sliced cherry tomatoes, chopped basil, broth, and white wine. Use a wooden spoon to scrape the garlic from the bottom of the pan and mix well.
Simmer the tomato sauce for 5-8 minutes or until the tomatoes are softened and release their juices.
Add back the cooked chicken to the tomato sauce, over medium-low heat. Cover the pan with a lid and simmer for another 2-3 minutes. Top with more fresh garlic and serve!
Expert Tips
- Do not disturb the chicken! Let the chicken cook for at least 5 minutes without flipping it so it will have time to properly form a crust.
- Use fresh ingredients! Making this dish with fresh ingredients like fresh tomatoes, fresh basil, and fresh garlic, is essential and will transform your dish.
- You can use your favorite parts of chicken for this recipe. Like chicken thighs, chicken tenders, and chicken breasts. Ensure that you clean the chicken and that there are no bones for easy eating.
- Use a meat thermometer to ensure that your chicken is cooked on the inside and prevents your chicken from drying out.
- Dry the chicken with paper towels before you rub it with the spices. This ensures you have perfect crispy skin on the outside and tender meat on the inside.
- Use chicken cutlets for this recipe to make sure they will cook through. Thick cuts will take longer to cook. I aim for ½ inch thickness for each chicken piece.

I would recommend using fresh tomatoes for the best flavor, but if you really want to make this recipe but don't have fresh tomatoes available, you can use canned tomatoes.
But I highly recommend trying this recipe at least once with fresh cherry tomatoes.
Storing
If you have leftovers, you can store them in the fridge for up to 3 days in an airtight container.
Reheating
Reheat the chicken in the microwave or in the toaster oven (or regular oven) until it is warm. Don't overheat to not dry the chicken.
Freezing
I do not recommend freezing this chicken. It has the best texture and juiciness while being made fresh. It is okay to reheat it a day, or two later, but the freezer might ruin the texture of this chicken and will dry it out.
Make ahead tips
You can make this dish ahead by making the sauce in advance. Then when you are ready to make the entire dish, cook the chicken according to the instructions and add it to the sauce and cook for another 2 or so minutes.
Substitutions
Chicken- you can swap the boneless chicken breasts with skinless chicken thighs or swap them with chicken tenderloins or chicken cutlets.
Variations
Spicy- you can make this dish spicy by adding an additional pinch or two of cayenne pepper or adding chili flakes. Add it to your personal liking.
Dried herbs- you can use your favorite mix of dried herbs for this chicken!
Chicken Pomodoro pasta- make this dish into chicken Pomodoro pasta by doubling the sauce and adding 400 grams of cooked pasta to the dish and mixing well.
Cheesy chicken Pomodoro- for a cheesy flavor, add ¼ to ⅓ cups of parmesan cheese to the sauce and another ½ cup of mozzarella cheese on top. You can use fresh mozzarella on top by ripping it with your hands.
Serving tips
Serve this chicken with air fryer garlic bread, cooked pasta, roasted vegetables, mashed potatoes, focaccia bread, or bruschetta with mozzarella.

Chicken Pomodoro (30-Minute Meal)
Ingredients
