what is bruschetta?
bruschetta is an authentic Italian appetizer made with toasted Italian bread rubbed with garlic and topped with olive oil. There are a few variations of bruschetta, some topped with tomato, cheese, vegetables, beans, meat, etc.
what you’ll need for this Bruschetta recipe:
Italian bread– use any of your favorite Italian bread.
tomatoes– any tomato kind will work for this recipe, the best tomatoes to use is Roma tomatoes, they taste the best, they are firmer and have less juice in them.
Fresh basil- for the best results use fresh basil, the combination of tomatoes and basil is incredible together.
Garlic– gives a delicious garlicky taste. We used 2 minced garlic cloves and 1 whole garlic clove.
Balsamic vinegar– adds a delicious flavor.
Olive oil- use extra virgin olive oil for the best flavor.
Spices– all you need for this recipe is salt and black pepper.
How to make this homemade bruschetta recipe:
1. Preheat an oven to 200c (400f), slice an Italian bread into thick slices, slicing diagonally.
2. Arrange the toast on a parchment paper-lined baking sheet, and brush each toast slice with olive oil. Rub the toasts with garlic.
3. Sprinkle the tops with parmesan cheese(optional), bake at 200c (400f) for 10 minutes, then at 150c (300f) for 5 minutes.
4. Core and dice tomatoes into small cubes. Drain any access tomato juice to prevent the toast from getting soggy. Transfer the tomatoes into a small mixing bowl.
5. Fold and cut basil leaves (as seen on the video) and transfer the basil slices into the bowl.
6. Add in the olive oil, minced garlic, balsamic vinegar, salt, and black pepper. Mix well
7. Marinade for at least 30 minutes.
8. Serve with the bruschetta toasts and top with more balsamic vinegar.
Can I make this bruschetta recipe in advance?
Yes, you can make the bruschetta salad a day ahead and then toast the Italian bread according to the instructions in the oven, then top the bread with the tomato salad and more balsamic vinegar.
Can I freeze the bruschetta?
We suggest using fresh tomatoes, they taste best fresh.
If you want, you can freeze the Italian bread pieces in an airtight freezer-friendly container for up to 2-3 months.
When using the bread, toast it a few more minutes then requested and follow the rest of the recipe.
