what you’ll need for this tomato soup:

Tomatoes– for this recipe we used regular tomatoes and cherry tomatoes for a sweeter taste.

Garlic– gives a delicious garlicky flavor.

Potato– we used potatoes to make the soup thicker and creamier.

Olive oil– we used olive oil, but you can use canola oil or vegetable oil.

Basil– use fresh basil for the best results.

Carrot– gives a great taste.

Spices– we like to use salt, black pepper, and chili flakes for this recipe.

Tomato paste– use any of your favorite tomato paste.

1.   Preheat an oven to 200c (400f), slice the tomatoes into large slices (each tomato into 4 pieces), cut the cherry tomatoes into halves.

2.   Prep a parchment paper on a baking sheet and add the tomatoes, cherry tomatoes, garlic, olive oil, salt, and pepper. Roast for 30 minutes at 200c (400f).

3.   Meanwhile, in a big pot, mix olive oil with chopped onion and cook for 5 minutes.

4.   Add the carrots, potatoes, and tomato paste, and mix well.

5.   Add hot water and cook until the tomatoes are ready. Transfer the roasted tomatoes and garlic into the pot and simmer for half an hour.

6.   Blend with a hand blender until smooth.

7.   Add salt, paprika, and chili flakes. Mix well.

8.   Add in the basil leaves and mix. Serve with grilled cheese or toasted bread.
