Creamy Brownie Cheesecake

This brownie cheesecake is rich and is made by swirling brownie batter with cheesecake batter, which is baked to creamy perfection.

In a large mixing bowl, add the butter and the dark chocolate. Melt completely in the microwave or on a bain Marie.

Add the granulated sugar, espresso powder, vanilla extract, and kosher salt, sift the cocoa powder, and mix with a whisk until well combined.

Add the eggs and egg yolk and mix until well combined and smooth.

Sift the flour and fold the mixture with a rubber spatula until the batter is just combined.

Into a large mixing bowl, add the cream cheese, sugar, vanilla extract, and sour cream and mix with an electric hand mixer.

Add the eggs and mix until smooth.

Sift the cornstarch and mix it until a homogeneous mixture forms.

Pour ½ of the brownie batter onto a parchment paper lined 9 inch springform pan and smooth it out with an offset spatula.

Top it with the cheesecake batter. Then top it with dollops of the remaining ½ of the brownie batter and use a butter knife to make swirls.

Bake the cheesecake in a 170c (340f) preheated oven for 40-50 minutes.

Pour the chocolate ganache on top of the cheesecake and smooth it out with an offset spatula.

Pipe the whipped cream with a star tip around the edges of the cheesecake. Serve and enjoy!
