These chewy pumpkin cookies are crispy on the edges, chewy and soft in the middle, and it is spiced with cinnamon, nutmeg, and ginger.

Into a big mixing bowl, add the room temperature butter, sugar, and brown sugar.

Cream it with an
electric hand mixer
for 2-3 minutes or until it’s creamy and light in color.
