Easy Creme Brûlée Cookies

These creme brûlée cookies are made with a soft cookie that is topped with vanilla pastry cream that is topped with caramelized sugar.

In a large mixing bowl, add the softened butter, granulated sugar, brown sugar, vanilla extract, and kosher salt.

Mix with an electric hand mixer until well combined.

Add the egg, and egg yolk, and mix until combined and creamy.

Then, add the flour, and baking soda, and mix with the hand mixer until just combined.

Roll the cookie dough balls into balls using your clean hands and place them on a parchment paper-lined baking sheet.

Bake in a 180c (350f) preheated oven for 9-11 minutes or until the edges of the cookies are light golden brown.

Transfer the pastry cream to a piping bag with a round piping tip and pipe on top of each cooled cookie.

Sprinkle with granulated sugar and use a kitchen torch to caramelize the sugar until it melts and turns a golden brown color.
