Easy Carrot Snack Cake

This easy carrot cake is made with a moist and easy one bowl carrot cake and is topped with a delicious cream cheese frosting.

Into a large mixing bowl, add the eggs, vegetable oil, melted butter, kosher salt, cinnamon, nutmeg, sugar, brown sugar, and vanilla extract.

Mix with a whisk until well combined.

Add the grated carrots and mix with a whisk until well combined.

Add the flour and baking soda and mix until just combined and there are no patches of flour visible.

Pour the cake batter to the prepared 9 by 9 baking pan.

Bake in a 180(350f) preheated oven for 30-40 minutes.

Top the cake with the cream cheese frosting and make a wave pattern with an offset spatula.
