Italian wedding cookies are shortbread-like cookies that are tossed in powder sugar and made with only a few simple ingredients!

Into a medium-sized mixing bowl, add the softened butter, vanilla extract, salt, and granulated sugar

Mix with an electric hand mixer until well combined and creamy.

Add the almond flour.

Mix until combined.

Add the flour and mix until just combined and there are no lumps of flour showing.

Scoop out about 1 tablespoon of the batter and shape it into a ball.

Place the cookie dough balls on a parchment paper-lined baking sheet, and bake in a 180c (350f) preheated oven for 11 minutes.

Let the cookies cool for 5 minutes. Fill a medium mixing bowl with powdered sugar and roll each cookie in the powdered sugar.
