Lemon Curd Cookies

These lemon curd cookies are made with a shortbread thumbprint cookie and filled with homemade lemon curd.

Into a medium mixing bowl, add the room temperature butter, lemon zest, powder sugar, kosher salt, and vanilla extract

Cream it with an electric hand mixer until creamy and smooth.

Add the egg and mix it until well combined.

Add the flour and baking powder to the butter mixture and mix with a spatula until just combined

Cover the dough bowl with plastic wrap and let the dough rest in the fridge for at least an hour.

Using an ice cream scooper, scoop out about 1 tablespoon of the cookie dough and roll them into balls.

Using your thumb or a teaspoon, make indents on each cookie.

Bake the cookies in a 180c (350f) preheated oven for 10 minutes.

Top the cookies with powder sugar and then spoon about 1 teaspoon of the lemon curd on the cookie.
