Pumpkin Cream Cheese Muffins

These soft and tender pumpkin cream cheese muffins are stuffed with cream cheese filling and topped with cinnamon sugar.

Into a large mixing bowl, add the pumpkin puree, oil, eggs, cinnamon, nutmeg, pumpkin pie spice, milk, sugar, brown sugar, vanilla extract, and salt.

Mix with a whisk until well combined.

Add the flour, baking soda, and baking powder.

Mix with a whisk until just combined and there are no lumps of flour visible.

In a small mixing bowl, add the cream cheese, sugar, and vanilla extract and mix until well combined and creamy.

Pour the batter into the muffin tins filling almost to the top us,  pipe about 1 teaspoon of the cream cheese filling on top of each muffin.

Bake in a 200c (400f) preheated oven for 5 minutes, and then bake for another 10-12 minutes at 180c (350f).
