Peanut Butter Balls With Rice Krispies

These no bake peanut butter balls with rice Krispies are crunchy and delicious and are super easy to make. They will turn into your favorite candy to make! You can serve them as a snack, dessert, or sweet treat!

Ingredients
 
 

  • 1 cup Peanut butter creamy like Jif or Skippy brand
  • 60 g Butter softened
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • teaspoon Kosher salt
  • 2 cup Rice cereal
  • 200 g Dark chocolate

Instructions
 

  • Into a large mixing bowl, add the creamy peanut butter and softened butter, and mix it using a whisk, electric hand mixer, or a stand mixer.
  • Add the powdered sugar (I suggest sifting the powdered sugar), vanilla extract, and kosher salt. Mix until the mixture is well combined.
  • Add the rice Krispies and mix until it's well combined. Place the mixture in the fridge to set for 30 to 60 minutes so it will be easier to roll and won't stick to your hands.
  • Use a small cookie scoop to scoop out the balls (or about 1 tbsp). Roll them into balls using your hands and place them onto a parchment paper-lined baking sheet.
  • Melt the chocolate and mix it until it's smooth and silky without any lumps. Place each ball on a fork or a spoon and gently dip it into the melted chocolate. Use a spoon to drizzle more chocolate on top.
  • My favorite trick to make these smooth and flawless is to dip each ball into the melted chocolate, drizzle the melted chocolate with another spoon until it's nicely coated, and then tap the excess chocolate by tapping the fork or the spoon on the side of the bowl.
  • Carefully place each ball onto a parchment paper-lined baking sheet. I like to use a small skewer to help place the truffles on the baking sheet.
  • Freeze the balls for about 30 minutes to let the chocolate set. Drizzle each ball with more melted chocolate.
  • Place the balls in the fridge to firm up for about 30 minutes, serve, and enjoy!

Notes

  • To get the chocolate topping sleek and shiny, I like adding 1 teaspoon of coconut oil or your favorite oil to the melted chocolate mixture.
  •  Make sure you line your baking pan with parchment paper to prevent the truffles to stick to the pan.
  • Use a cookie scoop to scoop out the balls, that way you will have even-sized balls, plus it ensures that your balls cool evenly.
  • Keep them chilled in the fridge before serving. if you place the balls at room temperature, the chocolate may melt.
  • Add some of your favorite add-ins! Make this recipe your own and add your favorite add-ins: mini chocolate chips, chopped walnuts, chopped pecans, kinder, toffee, and more! Be creative!
  • I highly recommend using smooth peanut butter for this like Jif or Skippy peanut butter.
  • Adding a little bit of oil to the chocolate mixture makes it easier to work with the chocolate and helps it melt faster.
