Easy Apple Cobbler

Rich and delish
This apple cobbler is made with cinnamon-spiced apple filling that caramelizes while baking, topped with a lightly crispy and buttery cake-like topping. A big scoop of ice cream on top is a must!

Ingredients
 
 

For the apple cobbler filling:

  • 5 Apples
  • ¼ cup Brown sugar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Cinnamon
  • ½ teaspoon Nutmeg
  • ½ teaspoon Lemon zest
  • 1 tablespoon Cornstarch
  • 1 teaspoon Vanilla extract

Apple cobbler topping:

  • 1 cup Flour
  • ½ cup Granulated sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Cinnamon
  • 80 g Butter
  • ¾ cup Whole milk

Instructions
 

  • Peel, core, and cut the apples into thin slices.
  • In a big mixing bowl, add the apples, brown sugar, cinnamon, nutmeg, cornstarch, lemon zest, lemon juice, and vanilla extract. Mix until the apples are covered evenly with the spices. Transfer the apples to a baking dish. We used a 9×13 inch baking dish.
  • In a food processor, add the flour, sugar, baking powder, cinnamon, kosher salt. Blend for a few seconds or until the dry ingredients are mixed.
  • Add the cubed COLD butter and mix again for about 10 seconds or until the mixture is sand-like.
  • When the food processor is still blending, drizzle the milk in and mix until just combined. Don’t overmix!
  • Scoop the mixture on the apples and spread it around. The mixture doesn’t have to cover all the apples.
  • Bake in a 180c (350f) oven for about an hour or until the top is golden brown and the apples are sizzling. Serve with a big scoop of vanilla ice cream and enjoy!

Notes

Use fresh apples. We find making apple crumble pie with fresh apples instead of canned apples. The naturally sweet and tart flavors that the apples naturally have makes apple fritters irresistible.
Mesure you flour correctly! When measuring your flour, avoid scooping it with a measuring cup. Instead, stir the flour with a spoon to create as many air pockets as possible, and spoon it into your measuring cup. Finally, level it with a back of a knife.
Make sure that your apple pieces are about the same size, this step ensures that the apples bake evenly.
Don’t overmix the batter, this step ensures that you have fluffy and moist topping and not dense and dry topping.
Use room temperature ingredients.
