Baked Goat Cheese Pasta Recipe

This baked goat cheese pasta is made with cherry tomatoes, feta cheese, fresh basil, baby spinach, mushrooms, balsamic vinegar, garlic, olive oil, and spices.

400 g Pasta ⅓ cup Olive oil 500 g Cherry tomatoes 100 g Mushrooms 1 cup Baby spinach 200 g Goat cheese ⅓ teaspoon Chili flakes ¼ teaspoon Kosher salt ¼ teaspoon Black pepper 2 teaspoon Dried oregano 1 cup Fresh basil 1 tablespoon Balsamic vinegar 5 Garlic cloves
preheat an oven to 200c (400f).
Add the cherry tomatoes, mushrooms, and spinach to an oven friendly baking dish.
Toss the cherry tomatoes, mushrooms, and spinach with balsamic vinegar, olive oil, salt, black pepper, garlic, and oregano.
Add a block of goat cheese in the middle of the dish and place all the cherry tomatoes around it.
Drizzle 1 tablespoon of olive oil on top of the block of goat cheese and sprinkle it with chili flakes and oregano.
Bake in a preheated oven for 20-30 minutes or until the tomatoes are cooked through and the block of goat cheese is softened.
Cook the pasta with a tablespoon of kosher salt.
Remove the baking dish from the oven and mash the goat cheese block with a fork, then mix it with the tomatoes until a creamy sauce forms.
Add the fresh basil and the cooked pasta, mix well.
Serve hot as a dinner or lunch and enjoy!
