This easy healthy gluten free granola is crunchy and delicious and is made with gluten-free rolled oats, pecan, cinnamon, and seeds, and sweetened with honey.

Into a large mixing bowl, add the oats, chopped pecans, pepitas, cinnamon, salt, vanilla extract, melted coconut oil, and honey.

And mix with a wooden spoon until well combined.

Transfer the mixture to a parchment paper-lined baking sheet.

And spread an even layer of the granola. Spread it with a wooden spoon.

Bake in a 180c (350f) preheated oven for 12 minutes, then remove the pan from the oven and stir the mixture well.

Put it and bake into the oven for another 10-12 minutes until slightly golden brown.

Remove from the oven and let the granola cool completely at room temperature. The cooling process is important, it makes the granola crispy and not soggy.
