Ingredients

Rolled oats- we used rolled oats for this recipe, you can use old-fashioned oats or quick oats. Make sure that you are using gluten-free oats if you are gluten-free.
Coconut oil- we used coconut oil for this. Melt it in the microwave for 20-second pulses. You can swap this with vegetable oil or olive oil if desired.
Honey- we used honey as a sweetener, you can use maple syrup as well.
Pecans- our favorite nuts for this recipe is pecans but feel free to use any of your favorite nuts for this.
Pepitas-
Vanilla extract- adds extra flavor. ½ teaspoon of vanilla extract is what you will need for this recipe.
Cinnamon- add ½ teaspoon of cinnamon for a delicious cinnamon flavor!
Kosher salt- you will need about ¼ teaspoon of kosher salt for this recipe.
Instructions
Preheat an oven to 180c (350) and prepare a baking pan with parchment paper.
Into a large mixing bowl, add the oats, chopped pecans, pepitas, cinnamon, salt, vanilla extract, melted coconut oil, and honey, and mix with a wooden spoon until well combined.
Transfer the mixture to a parchment paper-lined baking sheet and spread an even layer of the granola. Spread it with a wooden spoon.
Bake in a 180c (350f) preheated oven for 12 minutes, then remove the pan from the oven and stir the mixture well. Put it and bake into the oven for another 10-12 minutes until slightly golden brown.
This can burn very quickly so keep an eye on it!
Remove from the oven and let the granola cool completely at room temperature. The cooling process is important, it makes the granola crispy and not soggy.
Serve immediately and store in an airtight container at room temperature or in the fridge for up to 2 weeks.

- For chunkier granola, make sure that your oats are a little crowded in the pan. This way the oats will stick to each other and you will get chunky granola.
