    Ingredients

Before you start to make this recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

Full measurements are in the recipe card below.

Rolled oats- we used rolled oats for this recipe, you can use old-fashioned oats or quick oats. Make sure that you are using gluten-free oats if you are gluten-free.

Coconut oil- we used coconut oil for this. Melt it in the microwave for 20-second pulses. You can swap this with vegetable oil or olive oil if desired.

Honey- we used honey as a sweetener, you can use maple syrup as well.

Pecans- our favorite nuts for this recipe is pecans but feel free to use any of your favorite nuts for this.

    Pepitas-

Vanilla extract- adds extra flavor. ½ teaspoon of vanilla extract is what you will need for this recipe.

Cinnamon- add ½ teaspoon of cinnamon for a delicious cinnamon flavor!

Kosher salt- you will need about ¼ teaspoon of kosher salt for this recipe.

    Instructions

Preheat an oven to 180c (350) and prepare a baking pan with parchment paper.

Into a large mixing bowl, add the oats, chopped pecans, pepitas, cinnamon, salt, vanilla extract, melted coconut oil, and honey, and mix with a wooden spoon until well combined.

Transfer the mixture to a parchment paper-lined baking sheet and spread an even layer of the granola. Spread it with a wooden spoon.

Bake in a 180c (350f) preheated oven for 12 minutes, then remove the pan from the oven and stir the mixture well. Put it and bake into the oven for another 10-12 minutes until slightly golden brown.

This can burn very quickly so keep an eye on it!

Remove from the oven and let the granola cool completely at room temperature. The cooling process is important, it makes the granola crispy and not soggy.

Serve immediately and store in an airtight container at room temperature or in the fridge for up to 2 weeks.

    Expert Tips

    • For chunkier granola, make sure that your oats are a little crowded in the pan. This way the oats will stick to each other and you will get chunky granola.
    • Make sure that you line the pan with parchment paper to prevent the granola from sticking to the pan.
    • Don't bake the granola for too long! This is a common mistake when thinking that the granola is not crunchy enough, but while the granola cools it gets crunchy.
    • If you are looking for chunky granola, let it cool completely to room temperature before breaking it up. This way you will get more chunks.
    • Don't forget to mix halfway through baking. This ensures your granola bakes evenly.

    Storing

    Freezing

You can freeze this granola after it's cooled completely in an airtight container for up to 3 months. Try to get rid of as much air as you can.

    Substitutions

Nuts- you can swap the pecans with your favorite nuts like walnuts, almonds, hazelnuts, cashews, peanuts, pistachios, etc.

Seeds- You can swap the pepitas with other seeds like sunflower seeds, chia seeds, and flax seeds.

    Variations

Dried fruit- add dry fruit after you let the mixture cool. This way the dried fruit won't burn and leave a burnt flavor. You can add your favorite dried fruit like dried cranberries or raisins.

Chocolate chips- a delicious addition to granola is chocolate chips. You can use mini chocolate chips or white chocolate chips or any of your favorite chocolate chips! Add them after you cook and chill your granola.

Spice- you can add your favorite warm spices for this. We used cinnamon, but you can use ground ginger, nutmeg, cloves, etc.

    Serving tips

With Greek yogurt- serve a few tablespoons of the granola next to your favorite Greek yogurt, add fresh fruit and honey or peanut butter, and enjoy as a breakfast or a snack.

Serve as a cereal with milk- another way to enjoy granola is with your favorite milk, add the granola into a bowl and pour milk just like you eat your favorite cereal.

Eat it as is- a lot of people enjoy eating granola as is. Granola can be a super healthy snack that keeps you full for a while.
