Crustless Spinach Mushroom Quiche

This crustless spinach mushroom quiche is made with mushrooms, spinach, onion, and mozzarella, and is perfect for brunch, breakfast, or serve it for dinner!

In a large skillet, on medium heat, add olive oil, and the onions, and cook them until they are lightly golden brown.

Add the minced garlic and mix well.

Add the chopped mushrooms and spinach and mix.

Sautee on medium heat for about 10 minutes until the veggies shrunk. Sed aside to cool.

In a large mixing bowl, add the eggs, heavy cream, milk, salt, and pepper. Mix.

Add the vegetable mixture and grated mozzarella.

And mix until well combined.

Pour the mixture into a 9 inch tart or pie or quiche pan and bake in a 200c (400f) preheated oven for 40-45 minutes.

Until a knife inserted into the quiche comes out clean.
