This crustless spinach mushroom quiche is made with mushrooms, spinach, onion, and mozzarella, and is perfect for brunch, breakfast, or serve it for dinner!

This whole recipe comes together in about an hour, and it's very easy to make. It is a savory dish that has a creamy texture with lots of flavors from the cooked vegetables and cheese.

Ingredients
Before you start to make this spinach and mushroom quiche recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.
Full measurements are in the recipe card below.
Heavy cream- we used heavy cream in this recipe to make the quiche extra creamy and cheesy.
Mozarella- we used store-bought grated mozzarella cheese, but you can use fresh mozzarella cheese, or grate it yourself.
Garlic- you will need about 2 garlic cloves for this recipe. we use fresh garlic and grate it by hand. We do not recommend using store-bought pre-grated garlic, because it usually has less flavor.
Milk- use whole milk for this recipe.
Eggs- you will need 4 large eggs for this recipe. Make sure that your eggs are at room temperature.
Baby spinach- we used baby spinach for this recipe, but regular spinach will work great as well.
Mushrooms- we used Agaricus bisporus mushrooms for this recipe, but you can use your favorite kind of mushroom for this.
Onion- we used a large white onion for this recipe. You will need to chop it and use ¾ cup of the chopped onion.
Salt- we like to use kosher salt for this recipe.
Black pepper- for flavor.
Instructions
Preheat an oven to 200c (400f) and prepare a quiche or pie pan on the side.
In a large skillet, on medium heat, add olive oil, and the onions, and cook them until they are lightly golden brown. Add the minced garlic and mix well.

Add the chopped mushrooms and spinach and mix.

Sautee on medium heat for about 10 minutes until the veggies shrunk. Sed aside to cool.

In a large mixing bowl, add the eggs, heavy cream, milk, salt, and pepper, and mix with a whisk until well combined.

Add the vegetable mixture and grated mozzarella and mix until well combined.

Pour the mixture into a 9-inch tart or pie or quiche pan and bake in a 200c (400f) preheated oven for 40-45 minutes until a knife inserted into the quiche comes out clean.

- Add your favorite savory add-ins! You can add your favorite vegetables like squash, zucchini, sweet potato, bacon, chives, carrots, and cherry tomatoes.
- Add fresh herbs to this like cilantro, parsley, rosemary, dill, thyme, oregano, etc.
- Add your favorite salty cheese for this like feta, goat cheese, blue cheese, etc.

Faq's
Frittata has more eggs and less cream and milk content, also, a quiche is baked in a pan in the oven, and frittata cooks on a skillet.
The quiche will have golden brown edges and be set in the middle. I check its doneness by inserting a knife into the middle of the quiche and seeing that it's not raw.
Yes! You can add chopped bacon, sausage, or your favorite meat to the mixture.
Yes! You can make this with a pie crust or a quiche crust. Make sure you prebake the crust.

Storing
Store this pasta dish in the fridge. Cover it with a plastic wrap tightly or place it in an airtight container for up to 3 days.
Freezing
If you would like to freeze this quiche, you totally can! Simply make it according to the instructions, let it cool to room temperature, and either place it in an airtight container, or cover it with plastic wrap.
Freeze for up to 2 months. Make sure that you are using a freezer-friendly container.
Substitutions
Mushrooms- use your favorite kind of mushrooms. You can use portabella mushrooms, white Button Mushrooms, and crimini mushrooms.
Cheese- you can use your favorite cheeses for this like parmesan, gruyere, cheddar, gouda, etc.
Greens- use your favorite greens for this. I used spinach but you can use arugula, summer squash, collard, kale, etc.

Variations
Add-ins- add your favorite add-ins for this like chopped bacon, cooked sweet potatoes, feta, etc.
Spices- you can add your favorite spices for this like nutmeg, paprika, thyme, oregano, basil, etc.
