  • Use a Kitchen Scale: Weighing dry ingredients—especially flour—is the only way to guarantee a consistent dough texture. Measuring cups easily pack in too much flour, leading to dry, heavy cookies that won't spread.
  • Chill the Dough: Cold dough spreads slower in the oven. For thick, chewy cookies with concentrated flavor, chill your dough for at least 1 to 2 hours before baking.
  • Check Your Leaveners: Baking powder and baking soda lose their potency over time. Always test or replace open boxes every 6 months to ensure your cookies rise and spread correctly.
  • Use Room Temperature Ingredients: Butter, eggs, and milk should be at room temperature unless a recipe explicitly calls for cold or melted ingredients. This allows the fat and liquids to emulsify smoothly without breaking the dough.
  • Bake on Parchment Paper: Avoid greasing your baking sheets with butter or oil, which causes cookies to spread too fast and thin out. Use parchment paper or silicone baking mats instead.
