Ingredients

  • 1 ½ cups Ripe bananas about 3 large bananas
  • ½ cup Sugar
  • ½ cup Brown sugar
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • ⅓ teaspoon Kosher salt
  • ⅓ cup Sour cream
  • ½ cup Cookie butter melted
  • 1 teaspoon Baking soda
  • 1 ⅓ cups Flour
  • 5 Biscoff cookies chunks

Instructions

  • Prep: Preheat your oven to 180°C (350°F) and line a loaf pan with parchment paper.
  • Mash the Bananas: In a large mixing bowl, mash the ripe bananas with a fork or potato masher into a pudding-like consistency.
  • Wet Ingredients: Add the eggs, vanilla extract, granulated sugar, brown sugar, salt, and sour cream, and whisk until well combined.
  • Add the Biscoff: Melt the Biscoff spread in the microwave for about 20 seconds, then whisk it into the banana mixture until smooth.
  • Dry Ingredients: Add the flour and baking soda and mix with a spatula just until combined. Don't overmix.
  • Top and Bake: Pour the batter into the prepared loaf pan and scatter the Biscoff cookie chunks over the top. Bake for 50 to 60 minutes, until a toothpick inserted into the center comes out clean.
  • Cool: Let the banana bread cool in the pan for at least 20 minutes before slicing.
  • Biscoff Drizzle (Optional): Once the banana bread has cooled, melt a few tablespoons of Biscoff spread in the microwave for 15 to 20 seconds and drizzle it over the top.

Notes

  • Ripe Bananas: Use very ripe bananas with plenty of brown spots for the sweetest, most moist banana bread.
  • Room Temperature Ingredients: Use room temperature eggs and sour cream so the batter mixes smoothly and bakes evenly.
  • Don't Overmix: Mix the flour in just until combined. Overmixing makes the bread dense.
  • Measure Flour Correctly: Spoon and level the flour or use a kitchen scale for a tender crumb.
  • Tent With Foil: If the top browns too quickly, loosely cover the loaf with foil for the last 15 to 20 minutes.
  • Storage: Keep in an airtight container at room temperature for up to 3 days, or in the fridge for up to 1 week.
