This crustless spinach mushroom quiche is made with mushrooms, spinach, onion, and mozzarella, and is perfect for brunch, breakfast, or serve it for dinner!
Preheat an oven to 200c (400f) and prepare a quiche or pie pan on the side.
In a large skillet, on medium heat, add olive oil, and the onions, and cook them until they are lightly golden brown. Add the minced garlic and mix well.
Add the chopped mushrooms and spinach and mix.
Sautee on medium heat for about 10 minutes until the veggies shrunk. Sed aside to cool.
In a large mixing bowl, add the eggs, heavy cream, milk, salt, and pepper, and mix with a whisk until well combined.
Add the vegetable mixture and grated mozzarella and mix until well combined.
Pour the mixture into a 9 inch tart or pie or quiche pan and bake in a 200c (400f) preheated oven for 40-45 minutes until a knife inserted into the quiche comes out clean.

Add your favorite savory add ins! You can add your favorite vegetables like squash, zucchini, sweet potato, bacon, chives, carrots, cherry tomatoes.
Add fresh herbs to this like cilantro, parsley, rosemary, dill, thyme, oregano, etc.
Add your favorite salty cheese for this like feta, goat cheese, blue cheese, etc.
