These delicious baked chicken tacos are super easy and simple to make and are served with homemade avocado sauce.

Ingredients
 
 

  • 1 pound Boneless skinless chicken breast
  • 2 cups shredded Mexican blend cheese
  • ¼ cup Olive oil
  • 1 tablespoon Cilantro chopped
  • 2 tablespoon Lime juice
  • 8 Soft shell tortillas
  • 1 tablespoon Chili powder
  • 1 tablespoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Onion powder
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ teaspoon Dried oregano
  • teaspoon Dried thyme
  • ¼ teaspoon Cayenne pepper
  • ¼ teaspoon Chili flakes

Instructions
 

  • Preheat the oven to 180c (350f) and prepare a 13 by 9 dish on the side. Place the boneless, skinless chicken breasts in a baking dish and coat them evenly with the taco seasoning and olive oil.
  • Bake the chicken in a 180c (350f) preheated oven for about 25-30 minutes or until fully cooked through. Don’t overcook it so the chicken will remain juicy.
  • Once the chicken is cooked, remove it from the oven and let it cool slightly before shredding it using two forks.
  • Preheat the oven to 200c (400f). Place the tortillas on a parchment paper-lined baking sheet and fill each tortilla with the shredded baked chicken and cheese.
  • Bake in a preheated oven for 2 minutes until the cheese is melted, then fold each taco in half and bake for another 10-15 minutes or until the shells are crispy and slightly browned.
  • Once the tacos are done baking, serve them hot with sour cream, cilantro, salsa, and a drizzle of homemade avocado sauce on top.
