Ingredients

Chicken- use either chicken thighs or chicken breast for this recipe. we used chicken breast for this recipe, feel free to use whatever chicken part that you like most. We used boneless chicken breasts.
Olive oil- use extra virgin olive oil for the best flavor. If you don't want to use olive oil, you can use avocado oil, canola oil, or vegetable oil!
Kosher salt– we used kosher salt in this recipe. You can use sea salt or flakey salt as well.
Black pepper- for flavor. Adjust the black pepper to your personal liking.
Parsley- chop some fresh parsley and make sure you wash it throughout.
Dried herbs- you will need cumin, paprika, onion powder, cayenne pepper, chili flakes, dried oregano, dried thyme, and chili powder for this recipe. You can also use an Italian herb mix instead.
Cheese- go with a melty cheese like mozzarella, cheddar, or Monterey Jack for that gooey, delicious factor!
Tortillas- feel free to use flour tortillas like I did, but corn ones work just as well if you prefer them! Enjoy your tasty tacos with either type of tortilla.
For the avocado sauce
Avocado- use ripe avocados for the best creamy and delicious flavor and texture.
Lime- go for a zesty touch by using fresh lime juice to give it that extra pop of flavor.
Sour cream- go for a dollop of your favorite sour cream – nothing too fancy, just the good stuff!
Cilantro- wash your cilantro throughout and use the leaves and not the stems for a delish flavor and texture.
Instructions
Preheat the oven to 180c (350f) and prepare a 13 by 9 dish on the side. Place the boneless, skinless chicken breasts in a baking dish and coat them evenly with the taco seasoning and olive oil.
Bake the chicken in a 180c (350f) preheated oven for about 25-30 minutes or until fully cooked through. Don’t overcook it so the chicken will remain juicy.
Once the chicken is cooked, remove it from the oven and let it cool slightly before shredding it using two forks.
Preheat the oven to 200c (400f). Place the tortillas on a parchment paper-lined baking sheet and fill each tortilla with the shredded baked chicken and cheese.
Bake in a preheated oven for 2 minutes until the cheese is melted, then fold each taco in half and bake for another 10-15 minutes or until the shells are crispy and slightly browned.
Once the tacos are done baking, serve them hot with sour cream, cilantro, salsa, and a drizzle of homemade avocado sauce on top.
