Preheat an oven to 200c (400f) and prepare a sheet pan with parchment paper.
Into a small mixing bowl, add the olive oil, garlic powder, salt, black pepper, paprika, dried thyme, dried oregano, and minced garlic, and mix with a fork or a spoon until well combined. Set aside while you prep the potatoes.
Wash, dry, and cut the potatoes lengthwise into ½-inch slices, then cut them into ½-inch wide sticks.
Pat the potatoes dry using a paper towel or a clean kitchen towel and transfer them to a large bowl. Pour the seasoning mixture onto the fries and toss them until they are evenly coated with the seasoning.
Spread the fries on the prepared parchment paper lined baking sheet evenly and bake in a preheated 200c (400f) oven for 30 minutes. Then use a spatula to flip the fries to make sure they bake evenly.
Bake until golden brown. Keep an eye on them so they don't burn.
Top the fries with crumbled feta, fresh herbs (we used fresh dill), and lemon zest. Serve with your favorite dip, I highly recommend dipping it in our yogurt dill sauce.
Notes
Ensure that you cut your potatoes into even pieces so they will bake evenly. Make sure that every piece of potato is about the same thickness and length.
Dip these in your favorite dressing like ketchup, mayonnaise, boom boom sauce, bang bang sauce, ranch, etc.
Make sure to dry out the potatoes with paper towels or a towel to make them crispy.
I highly suggest not overcrowding the sheet pan, cook it in batches if needed to make them cook properly.
Serve these immediately when they are hot and crispy for the best experience!
