What are Greek fries?
Greek fries are also known as patates tiganites, they are a super popular food in Greece. They are made by sprinkling dried oregano, salt, and pepper.
They are deep-fried or baked in olive oil and topped with lemon zest and crumbled feta. This version is oven baked, which is way healthier, and super quick too!
Why this recipe works

- Texture- these baked fries are crispy on the outside and creamy and tender in the middle and have the perfect fries texture even though they are baked!
Ingredients
Before you start to make this recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

Potatoes– for this recipe, we like to use Yukon Gold potatoes, russet potatoes, or red potatoes, but any potato kind will work great for this recipe!
Paprika– use your favorite brand of paprika. You can use sweet paprika or smoked paprika.
Garlic- use fresh garlic for this, this adds so much delicious flavor. I used 2 garlic cloves, but you can add more or use less if you want!
Garlic powder- use your favorite brand of garlic powder. You can use onion powder instead.
Olive oil- use extra virgin olive oil for the best flavor. If you don't want to use olive oil, you can use avocado oil, canola oil, or vegetable oil!
Herbs- we used dried thyme and dried oregano for this recipe.
Kosher salt– we used kosher salt in this recipe. You can use sea salt or flakey salt as well.
Black pepper- use ground black pepper.
Toppings
Feta cheese- you can crumble a block of feta cheese or use crumbled feta for this. use your favorite brand of feta cheese.
Lemon zest- top the fries with freshly grated lemon zest immediately after removing the fries from the oven.
Fresh dill- adding chopped fresh dill is so delicious and adds a yummy flavor, I highly recommend not skipping this unless you dislike dill.
Instructions
Preheat an oven to 200c (400f) and prepare a sheet pan with parchment paper.
Into a small mixing bowl, add the olive oil, garlic powder, salt, black pepper, paprika, dried thyme, dried oregano, and minced garlic, and mix with a fork or a spoon until well combined. Set aside while you prep the potatoes.
Wash, dry, and cut the potatoes lengthwise into ½-inch slices, then cut them into ½-inch wide sticks.
Pat the potatoes dry using a paper towel or a clean kitchen towel and transfer them to a large bowl. Pour the seasoning mixture onto the fries and toss them until they are evenly coated with the seasoning.
Spread the fries on the prepared parchment paper lined baking sheet evenly and bake in a preheated 200c (400f) oven for 30 minutes. Then use a spatula to flip the fries to make sure they bake evenly.
Bake until golden brown. Keep an eye on them so they don't burn.
Top the fries with crumbled feta, fresh herbs (we used fresh dill), and lemon zest. Serve with your favorite dip, I highly recommend dipping it in our yogurt dill sauce.
Expert Tips
- Ensure that you cut your potatoes into even pieces so they will bake evenly. Make sure that every piece of potato is about the same thickness and length.
- Soak the fries in water. (optional) Letting the cut fries soak in cold water for 30 minutes to an hour helps remove excess starch, leading to crispier results.
- Dip these in your favorite dressing like ketchup, mayonnaise, boom boom sauce, bang bang sauce, ranch, etc.
- Make sure to dry out the potatoes with paper towels or a towel to make them crispy.
- Roast the fries in a preheated oven at 400°F for 20-25 minutes, flipping halfway, until crispy and golden brown.
- I highly suggest not overcrowding the sheet pan, cook it in batches if needed to make them cook properly.
- Serve these immediately when they are hot and crispy for the best experience!

I didn't soak the potatoes in this recipe. This recipe is super easy and straightforward and will take you no time to prep. If you would like to soak the potatoes, feel free to do so, but make sure you pat them dry.

When ready to use, place the potatoes in the fridge overnight to defrost, or thaw it at room temperature for a few hours. Reheat in the oven at 250c (482f) for 5-10 minutes, or until crispy.
Substitutions
Herbs- top these fries with your favorite fresh herbs like parsley, cilantro, rosemary, chives, oregano, thyme, etc.
Dairy-free- you can make these dairy free by skipping the feta cheese on top or using dairy-free feta cheese.

Spice- for a little heat, coat the fries in a mixture of chili powder, cumin, and cayenne pepper.
