For the crust
Oreo cookies- we used Oreo cookies for this cheesecake because we like the chocolaty taste of Oreo cookies, but you can use any kind of chocolate digestive biscuits.
Melted butter– melt the butter in the microwave for 30 seconds pulses, to make sure that the butter doesn’t boil up and explode in the microwave (been there done that), or melt it on the stovetop.
For the filling
Cream cheese- the most important ingredient in this recipe, is cream cheese. Make sure that you are using full-fat cream cheese, and make sure that it’s at room temperature.
Heavy whipping cream- use cold heavy whipping cream.
Powder sugar- you will need powdered sugar for this recipe. you don’t have to buy powdered sugar, you can simply make it at home by blending granulated sugar in a blender or food processor.
Vanilla extract- for extra flavor.
Caramel sauce- you can make your own homemade caramel sauce using this recipe or use store-bought one!
Salt– We used kosher salt for this recipe. Salt doesn’t give the filling a salty taste, it helps to enhance the flavor.
Instructions
Make the crust: pulse Oreos in a food processor until fine crumbs form. If you don’t have a food processor on hand, place the Oreos in a Ziplock bag and smash them with a cup until fine crumbs form.
Into a small to medium mixing bowl, add the crumbs, and melted butter. Mix with a spoon until the crumbs are coated with butter.
Transfer the crumbs into a prepared 9-inch pie pan, pressing evenly and firmly into the pan.
Place the pan in the freezer for at least 20 minutes to set.
Into a large mixing bowl, add the cold heavy whipping cream, kosher salt, vanilla extract, and powder sugar, and whip it with an electric hand mixer to stiff peaks.
Add the softened cream cheese and the refrigerated caramel sauce, and mix until well combined, and the mixture is smooth and creamy.
Remove the oreo crust from the freezer and pour the cheesecake mixture onto the crust, smooth it out using a spatula. Store in the fridge to set for at least 8 hours.
Remove from the fridge and drizzle more caramel sauce, melted chocolate of your choice, and chopped pecans. Make dollops of whipped cream around the edges of the pie for a beautiful look. Serve and enjoy!

- Make sure that you are using room-temperature cream cheese in this recipe, this step makes it easier to mix the cream cheese with no unnecessary lumps, we don’t want that.
- Use high-fat cream cheese or the well-known Philadelphia cream cheese. Using full-fat cream cheese ensures that your pie will be stable.
- For a smooth and creamy pie, make sure that you are using room-temperature ingredients. Before you begin to make this dessert, make sure that your cream cheese is completely soft, and that your caramel sauce is at room temperature.
- Scrape down the sides of the bowl frequently to ensure that you have a homogeneous mixture that has no cream cheese lumps.

Storing
Store this pie in the fridge (because it contains dairy) covered tightly with plastic wrap for up to 4 days.
Freezing
This pie freezes great! To freeze this, make it according to the instructions, at let it set in the fridge for 4 hours.
When the pie is completely set, you can freeze it covered in a few layers of plastic wrap or foil. This pie will freeze for up to 3 months. To thaw, place the pie in the fridge overnight.
Substitutions
Gluten-free - if you want to make this recipe gluten-free, simply replace the Oreos with gluten-free Oreos.
Mini pies- make these mini-sized pies by making them in a muffin pan! Make them just like I make my no bake mini cheesecakes.
Variations
Chocolate biscuits- if you don't want to use Oreos, use chocolate biscuits for the crust!
Chocolate chips- add mini or regular chocolate chips on top of the pie or an extra crunch and texture.
Crust- you can swap the oreo crust and make a graham cracker crust instead. Simply swap the Oreos with graham crackers and use the same amount of butter.
