Ingredients
Before you start to make this recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

Light corn syrup- is also known as glucose syrup. This ingredient is super important, it gives the icing a beautiful gloss.
Peanut butter- any peanut butter kind will work for this recipe, natural, processed, chunky, or smooth. The results will be different for each peanut butter kind. We prefer to use smooth store-bought peanut butter like skippy or Jiff.
Granulated sugar– we like to use granulated sugar, the most common sugar in baking. Caster sugar will work great as well.
Cornflakes- use your favorite brand of cornflake for this. Make sure that you are not using frosted cornflakes so your candy won't turn out too sweet.
Vanilla extract– Vanilla extract Is an essential ingredient for making candy.
Instructions
Line a baking sheet with parchment paper or silicone baking mats.
Into a saucepan over medium heat, add the corn syrup, sugar, vanilla extract, and peanut butter, and mix with a whisk or a spatula until well combined and smooth. (Until the sugar has melted)

Set the saucepan aside and pour in the cornflakes and mix until the cornflakes are covered evenly with the mixture.

Immediately scoop the cookies with a cookie scooper onto a parchment paper-lined baking sheet keeping the candy 2 inches apart from each other.
Allow the candy to set at room temperature for about 30 minutes. Enjoy!

- Use regular peanut butter for this recipe and not natural peanut butter. It will give you a better texture and is perfect for this recipe.
- Before you start preparing the cornflake mixture, make sure you prepare the baking sheet with parchment paper since the candy hardens fast, so you will need to work fast.
- Add your favorite add-ins like mini chocolate chips, different flavored extracts like almond extract, chopped nuts, etc.
- For a festive look, add a drop or two of gel food coloring to the mixture: green for Christmas, and pink or red for valentines Day.
- Use plain cornflakes for this recipe and not the frosted cornflakes kind. If you use frosted cornflakes, the candy will be too sweet.
- Stir the mixture constantly when you cook. Stirring the mixture constantly makes sure that you don't have unnecessary lumps in the mixture.
- Use a cookies scoop to scoop out the cookies, that way you will have even-sized cookies.

I do not recommend freezing cornflake candy. This will dry out the candy and will ruin it. Luckily, this recipe is very easy and simple to make and prep!
Substitutions
Gluten-free- for a gluten free recipe, use gluten free cornflakes instead of the regular kind.
Honey- you can substitute half of the corn syrup (not the whole amount) with honey for a healthier option.
Nut butter- you can make this recipe with other nut butter like almond butter or cashew butter instead of peanut butter.
Variations
Christmas themed- add a drop or two of green food coloring and shape the cornflake candy into wreaths.
Flavor- instead of using vanilla extract, use almond extract or your favorite flavored extract.
Chocolate- add 100 g of melted dark chocolate to the mixture for a delicious chocolate flavor or sift ¼ cup of cocoa powder into the mixture.
