These no bake peanut butter balls with rice Krispies are crunchy and delicious and are super easy to make.
You will only need a few simply ingredients to make these crunchy peanut butter balls. They have a delicious flavor and the most delicious chocolate and peanut butter combination.
These peanut butter balls are very similar to the classic buckeyes but they are made with a twist, they are made with rice Krispies in the mixture!
They will turn into your favorite candy to make! You can serve them as a snack, dessert, or sweet treat!

Ingredients
Before you start to make this recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

Peanut butter- and peanut butter will work for this recipe, natural, processed, chunky, or smooth. The results will be different for each peanut butter kind. We prefer to use smooth store-bought peanut butter.
Butter- use unsalted butter for this recipe. Only butter will work for this recipe, no margarine, and no coconut oil. Margarine has a weird taste and can ruin the flavor of these delicious balls.
Powder sugar (optional)- you will need powdered sugar to sprinkle over the pastry. you don’t have to buy powdered sugar, you can simply make it at home by blending granulated sugar in a blender or food processor.
Vanilla extract- vanilla extract adds extra flavor.
Kosher salt- you will need about ½ teaspoon of kosher salt for this recipe.
Rice Krispie cereal- you will need puffed rice cereal for the mixture of these. You can use both regular rice Krispie cereal and puffed brown rice cereal.
Dark chocolate- you can use your favorite kind of chocolate for these. I used dark chocolate, but you can use semisweet chocolate, white chocolate, or milk chocolate!
Instructions
Into a large mixing bowl, add the creamy peanut butter and softened butter, and mix it using a whisk, electric hand mixer, or a stand mixer.
Add the powdered sugar (I suggest sifting the powdered sugar), vanilla extract, and kosher salt. Mix until the mixture is well combined.
Add the rice Krispies and mix until it's well combined. Place the mixture in the fridge to set for 30 to 60 minutes so it will be easier to roll and won't stick to your hands.
Use a small cookie scoop to scoop out the balls (or about 1 tbsp). Roll them into balls using your hands and place them onto a parchment paper-lined baking sheet.
Melt the chocolate and mix it until it's smooth and silky without any lumps. Place each ball on a fork or a spoon and gently dip it into the melted chocolate. Use a spoon to drizzle more chocolate on top.
My favorite trick to make these smooth and flawless is to dip each ball into the melted chocolate, drizzle the melted chocolate with another spoon until it's nicely coated, and then tap the excess chocolate by tapping the fork or the spoon on the side of the bowl.
Carefully place each ball onto a parchment paper-lined baking sheet. I like to use a small skewer to help place the truffles on the baking sheet.
Freeze the balls for about 30 minutes to let the chocolate set. Drizzle each ball with more melted chocolate.
Place the balls in the fridge to firm up for about 30 minutes, serve, and enjoy!

- To get the chocolate topping sleek and shiny, I like adding 1 teaspoon of coconut oil or your favorite oil to the melted chocolate mixture.
- Make sure you line your baking pan with parchment paper to prevent the truffles to stick to the pan.
- Use a cookie scoop to scoop out the balls, that way you will have even-sized balls, plus it ensures that your balls cool evenly.
- Keep them chilled in the fridge before serving. if you place the balls at room temperature, the chocolate may melt.

If your peanut butter balls are sticky, you may didn't refrigerate the mixture for long enough. I recommend refrigerating the mixture for at least 30 minutes for it to be easier to roll the balls.
Storing
Store these in the fridge (since they contain dairy) covered tightly with plastic wrap for up to 7 days.
Freezing
To freeze these, you will need to wrap the balls in plastic wrap or foil and seal them in an airtight container or in an airtight resealable bag. You can freeze these for up to 2 months.
Substitutions
Gluten-free- this recipe is naturally gluten-free, but I like to ensure that the package of the rice cereal says "gluten-free" just in case it's mixed with gluten products.
Dairy-free- you can make this dairy-free by swapping the butter with dairy free butter.
Variations
Flavors- add your favorite flavors to the mixture like vanilla extract, almond extract, lemon juice, cinnamon, cocoa powder, etc.
Toppings- top these balls with chopped nuts, your favorite sprinkles, cocoa powder, oreo crumbs, cinnamon sugar, coconut flakes, mini chocolate chips, and much more!
Spread- you can substitute the peanut butter with your favorite spread as well like Nutella, dulce de leche, almond butter, marshmallow fluff, chocolate ganache, etc.
