    These roasted cabbage steaks are a quick and delicious side dish made by slicing cabbage into slices, topping it with olive oil and spices, and baking it to a perfect golden brown.

    What are cabbage steaks?

    Cabbage steaks are thick slices of cabbage that are smothered with olive oil and spices, and can be baked, roasted, or grilled! They make a delicious side dish that is healthy and low-carb but also filling and satisfying!

    Ingredients

    Before you start to make this baked cabbage steaks recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

    Full measurements are in the recipe card below.

    Cabbage- fresh green cabbage works best for this recipe. I used two medium green cabbages for this.

    Olive oil- use extra virgin olive oil for the best flavor. If you don't want to use olive oil, you can use avocado oil, canola oil, or vegetable oil!

    Garlic powder- use your favorite brand of garlic powder.

    Onion powder- onion powder adds a delicious flavor along with garlic powder. Use your favorite brand of onion powder or what you have on hand!

    Paprika– use your favorite brand of paprika.

    Chili flakes- add a little bit of spicy touch to the cabbage. You can add more or less to your liking.

    Dried parsley- use your favorite brand of dried parsley for this. You can swap it with your favorite Italian seasoning as well.

    Kosher salt– we used kosher salt in this recipe. You can use sea salt or flakey salt as well.

    Black pepper- use ground black pepper.

    Instructions

    Using a sharp knife, cut the stems off the cabbage and cut each piece
    into 1-inch thick rounds.

    Place the cabbage pieces on a baking sheet lined with parchment
    paper. Brush each cabbage piece with a generous amount of olive oil.

    Sprinkle an even amount of salt, garlic powder, paprika, and chili
    flakes on top.

    Flip the cabbage pieces over and repeat with the same steps (olive
    oil, salt, garlic powder, paprika, and chili flakes)

    Bake the cabbage steaks for 20 minutes at 230c (450f), flip them, and
    bake for another 20 minutes until they have a golden brown color and are tender from the inside.

    Expert Tips

    • Cut the cabbage into even steaks so they will cook evenly!
    • Do not skip the oil in this recipe! If you are on a diet and are trying to avoid oil at all costs, do not skip it! The little bit of oil that is added to these steaks helps to soften the cabbage and helps the spices to absorb into the cabbage.
    • Season both sides of the cabbage! This will ensure that your steaks will be super flavorful in every bite.
    • I recommend using small to medium cabbages for easy cutting and the best serving sizes.

    Faq's

    Can I use red cabbage?

    Yes! The cooking time will be the same. Follow the same exact instructions with the red cabbage as you will with the green cabbage.

    Why is my cabbage tough?

    Cabbage needs liquid to soften. This is why it's important that you don't skip the oil. You can use your favorite oil that you use for everyday cooking. If you are using coconut oil, melt it first.

    How do you know when the cabbage is done?

    The cabbage should look golden brown and tender on the inside and slightly crispy on the outside.

    Why does my cabbage taste bitter?

    Cabbage contains compounds that can give it a slightly bitter flavor. Salt and lemon help to get rid of the bitter flavor so do not skip the salt!

    Storing

    If you have leftovers, you can store them in the fridge for up to 3 days. Reheat them in the microwave or in the toaster oven (or regular oven) until they are warm.

    Freezing

    Let the cabbage cool to room temperature, then place them in the freezer and stored them in an airtight freezer-friendly container for up to 2 months.

    When ready to use, place the cabbage in the fridge overnight to defrost, or thaw it at room temperature for a few hours.

    Reheating

    Reheat in the oven at 200c (400f) for 5-10 minutes, or until it's warm and slightly crispy on the edges. You can also reheat it in the microwave until it's warm!

    Serving tips

    I recommend serving these immediately next to your favorite protein like our air fryer chicken tenders, cast iron chicken breast, honey butter chicken, and creamy limone chicken.

    Substitutions

    Seasoning- you can substitute the seasoning with your favorite mix of flavors that you like. You can use Italian seasoning, Mexican seasoning, greek seasoning, etc.

    Variations

    Spicy- if you like your cabbage a little spicy (or a lot), you can add ½ teaspoon of cayenne pepper or ½ teaspoon of chili flakes.

    Garlic- for a delicious garlic cabbage, add oven-roasted garlic to the cabbage.
