These fries are made with minimal oil, seasoned to perfection, and will make you feel good from the inside out! They are loaded with nutrients and are similar to sweet potato fries that we love!

Ingredients
Before you start to make this recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

Carrots- use fresh carrots for this recipe. You will need about 1 pound of carrot for this recipe. You will need to cut off the stems and peel them.
Olive oil- use extra virgin olive oil for the best flavor. If you don't want to use olive oil, you can use avocado oil, canola oil, or vegetable oil!
Kosher salt– we used kosher salt in this recipe. You can use sea salt or flakey salt as well.
Black pepper- use ground black pepper.
Spices- you can use your favorite mix of Italian seasoning, but for this recipe, I used dried parsley and dried thyme.
Paprika– use your favorite brand of paprika.
Garlic powder- use your favorite brand of garlic powder. You can use onion powder instead.
Instructions
Preheat an oven to 230c (450f) and prepare a sheet pan with parchment paper.
Peel the carrots and cut off the stems and cut them into thin but not too thin fries.
Pat them dry with paper towels until they are dry. This will help to make them crispy so don't skip this step!
Add the carrots to a large mixing bowl along with the garlic powder, paprika, dried parsley, dried thyme, olive oil, kosher salt, and black pepper.
Mix with a wooden spoon until well combined.
Spread the fries on the prepared parchment paper lined baking sheet evenly and bake in a preheated 230c (450f) oven for 15 minutes. Then use a spatula to flip the fries to make sure they bake evenly.
Bake for another 5-10 minutes or until the fries are crispy on the outside. Keep an eye on the fries so they won't burn!
Expert Tips
- Ensure that you cut your carrots into even pieces so they will bake evenly. Make sure that every piece of carrot is about the same thickness and length.
- Dip these in your favorite dressing like ketchup, mayonnaise, boom boom sauce, bang bang sauce, ranch, etc.
- Make sure to dry out the carrots with paper towels or a towel to make them crispy.
- I highly suggest not overcrowding the sheet pan, cook it in batches if needed to make them cook properly.
- Serve these immediately when they are hot and crispy for the best experience!
- Do not cut these too thinly! The carrot fries shrink while they bake, so it is important that you do not cut them too thinly but also not too thick.

Storing
If you have leftovers, you can store them in the fridge for up to 4 days. Reheat them in the microwave or in the toaster oven (or regular oven) until they are warm and crispy again.
Reheating
To reheat these, I recommend preheating an oven or toaster oven to its highest temperature (250c, 482f) and heating it for about 10 minutes or until the carrots are crispy again.
Freezing
Let the fries cool to room temperature, then place them in the freezer and stored them in an airtight freezer-friendly container for up to 2 months.
When ready to use, place the carrots in the fridge overnight to defrost, or thaw it at room temperature for a few hours. Reheat in the oven at 250c (482f) for 5-10 minutes, or until crispy.
Substitutions
Seasoning- you can substitute the seasoning with your favorite mix of flavors that you like. You can use Italian seasoning, Mexican seasoning, greek seasoning, etc.
Variation
Spicy- if you like your carrots a little spicy (or a lot), you can add ½ teaspoon of cayenne pepper or ½ teaspoon of chili flakes.
Everything bagel- if you are obsessed with everything bagel seasoning like us, you should try seasoning your carrots with everything bagel seasoning.
Natural- if you like the natural flavor of carrots, skip the spices, and add coat the carrots with oil, salt, and black pepper for a natural carrots flavor.
Serving tips
