Ingredients
Before you start to make this apple tarts recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

Frozen puff pastry- we use store-bought frozen puff pastry, we find it the easiest and fastest to work with. If you want to use a homemade puff pastry, that will work great as well.
Apples- we like to use green apples for this recipe, they are a little bit less sweet, but any kind of your favorite apples will work!
Brown sugar- we use brown sugar for this recipe. Brown sugar adds a caramelly flavor. You can use dark brown sugar as well.
Cinnamon and nutmeg- give a delicious flavor and compliments the apples perfectly.
Salt– We used kosher salt for this recipe. Salt doesn’t give the cake a salty taste.
Honey- we used honey for the apple topping, but you can swap it with maple as well!
Cornstarch- to thicken up the mixture so it will be easy to work with.
Egg- you will need 1 egg for this recipe, for the egg wash. Make sure that your egg is at room temperature.
Instructions
Preheat an oven to 200c (400f), and let your puff pastry thaw for about 2 hours (before preheating the oven) or until it's easy to work with.
Lightly flour a clean surface and use a rolling pin to roll the puff pastry slightly and cut it into 9 even rectangles using a pizza cutter or a knife.
Use a butter knife to score a smaller rectangle into each tart piece.
Place the rectangles on a parchment paper-lined baking sheet and place it in the fridge while you make the topping.
Make the apple topping
Peel, core, and slice the apples into medium-sized slices (not too thinly).
Add the apples to a saucepan over medium heat, and add the cinnamon, nutmeg, brown sugar, kosher salt, honey (or maple), and 1 tablespoon of water. Mix with a wooden spatula until well combined and the brown sugar is dissolved.
Reduce to medium-low heat, cover, and simmer for about 5 minutes.
Add the cornstarch mixed with a little bit of water and mix until there are no lumps of cornstarch visible. Add the cornstarch mixture to the apple mixture and mix well. Set aside to cool.
Remove the pan from the fridge and top each dough rectangle with a few slices of the cooked apples. Brush the edges of the tarts with egg wash and sprinkle demerara sugar on top of an extra crunch.
Bake the tarts in a 200c (400f) preheated oven for 20-25 minutes or until they are golden brown on top. Keep an eye on the tarts so they won't burn.
Remove from the oven and let them cool for 20 minutes.
Top each tart with caramel sauce (store-bought or homemade) and powdered sugar. Serve with vanilla ice cream and enjoy!
Expert Tips
- Feel free to make the tarts in whatever size you'd like. You can make these smaller or bigger. We cut ours into 6 tarts.
- Keep an eye on the tarts when they are baking! They are easy to burn.
- Make these tarts your own by adding or topping them with your favorite flavors. Add a teaspoon of fig jam, and top it with powdered sugar, caramel sauce, etc.
- Don't slice the apples too thinly, I recommend slicing them into medium thickness, because in the cooking process, they will shrink, and we want to feel the texture of the apples in every bite.
Faq's
Yes! You can use store-bought precooked puff pastry for this recipe. I like baking frozen puff pastry for the freshest apple tart.
Use your favorite kind of apples! We like using granny smith apples, but any apple kind will work. If you like sweet apples, use Honeycrisp, or pink lady.
Place the puff pastry at room temperature for 2-3 hours until its thawed or place it in the fridge overnight.
Storing
Store these in the fridge sealed with plastic wrap or foil and store these for up to 4 days.
Reheating
Reheat these in a toaster oven or regular oven at 150c(300f) for about 5 minutes (keep an eye so they won't burn) until they are nice and crispy.
Freezing
Freeze these tarts after they are cooled completely in an airtight freezer-friendly container for up to 2 months.
Another way to freeze these is to make the apple topping and make the tarts, and before baking, place the unbaked tarts in an airtight container or in a ziplock bag, and freeze for up to 2 months.
When you are ready to bake, take them out of the freezer on a parchment paper-lined baking sheet, brush egg wash on top, and top with demerara sugar, and bake at a 200c (400f) preheated oven for 20-25 minutes or until golden brown.
Substitutions
Fruit- you can swap the apples with pears and make a pear tart.
Puff pastry- you can swap the store-bought puff pastry and use a homemade puff pastry if needed!
Gluten free- you can make this recipe gluten free by swapping the puff pastry with gluten free puff pastry.
Variations
You can make these your own by adding different flavors to them.
Spices- add your favorite spices for cinnamon-spiced desserts! Like nutmeg, cloves, pumpkin spice, ginger, etc.
Nuts- add chopped nuts to the apple mixture for an added crunch.
Glaze- top this tart with a simple glaze instead of caramel sauce.
Large apple tart- you can make this tart into a single large tart instead of cutting the dough into rectangles.
Serving tips
I like serving these apple tarts with a drizzle of caramel sauce, but you can use maple syrup or honey instead.
Another great way to serve these tarts is with a large dollop of freshly made whipped cream or vanilla ice cream. You can also brush the top with apricot jam for a glossy look and delish flavor.
