Strawberry turnovers are very easy to make, they are made with a flakey and buttery puff pastry dough and filled with homemade strawberry filling, topped with a simple glaze, and served with vanilla ice cream.

What is turnover?
A turnover is a type of pastry made by placing a savory or sweet filling on a piece of dough, folding the dough over, sealing, and baking it. Turnovers are often eaten for breakfast.

Ingredients
Before you start to make this strawberry puff pastry recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

Frozen puff pastry– we use store-bought frozen puff pastry, we find it the easiest and fastest to work with. If you want to use a homemade puff pastry, that will work great as well.
Fresh strawberries- you will need to wash the strawberries well, strain them, and cut them into small cubes to make the cooking process faster.
Granulated sugar- you will need ½ cup of granulated sugar for this recipe. The cheesecake will be sweet, but not too sweet. One cup of sugar is the perfect balance of sweetness for this recipe.
Lemon zest- the lemon zest adds an aroma and a light flavor to this pastry.
Lemon juice- use fresh lemon juice for this recipe. This will make the flavor pop!
Egg- you will need 1 egg for this recipe, for the egg wash. Make sure that your egg is at room temperature.
For the glaze:
Powder sugar- you will need powdered sugar for this recipe. you don’t have to buy powdered sugar, you can simply make it at home by blending granulated sugar in a blender or food processor.
Vanilla extract- for extra flavor.
Milk- we used whole milk for the glaze but if you want you can use your favorite type of milk.
Instructions
Preheat an oven to 200c (400f), and let your puff pastry thaw for about 30-40 minutes or until it's easy to work with.
Lightly flour a clean surface and use a rolling pin to roll the puff pastry slightly and cut it into 12 even squares using a pizza cutter. (we used two puff pastry sheets. every sheet is cut into 6 squares)
In a medium-sized pan add the chopped strawberries, sugar, lemon juice, and lemon zest, and simmer for 15 minutes on medium heat.
Place 2 tablespoons of the cooled strawberry mixture on top of the puff pastry, bring two edges together, and seal the edges with a fork. Repeat with the rest of the turnovers.
Step 5: Place the turnovers on a parchment-lined baking sheet keeping them about 1 inch apart. Mix 1 egg with a tablespoon of water, brush it on top of the turnover, and sprinkle brown sugar on top (optional).
Bake at 200c (400f) for about 20 minutes until golden brown.
Make the simple glaze
Into a medium-sized mixing bowl, add the powder sugar, milk, and vanilla extract. Mix with a spoon until smooth and silky.
Feel free to adjust the consistency by increasing and decreasing the milk to your glaze thickness liking.
While the turnovers are warm, drizzle the glaze we made on top. Serve with a big scoop of vanilla ice cream and caramel sauce on top!

- Feel free to make the turnovers in whatever size you'd like. You can make these smaller or bigger. We cut ours into 12 turnovers.
- Keep an eye on the turnovers when they are baking! They are easy to burn.
- Thaw the puff pastry in advance. An hour or two before making this, take the frozen puff pastry from the freezer and let it thaw at room temperature until it's defrosted.

These turnovers will last for up to 3 days stored in an airtight container in the fridge. When you are ready to reheat them, simply place them in a toaster oven, regular oven, or microwave.

Yes! If you are using frozen strawberries, there is no need to thaw or defrost them. They will defrost and cook when you are making the filling.
Storing
It’s okay to store these turnovers at room temperature. Make sure that you store it in an airtight container so it won’t dry out.
Freezing
Freeze the turnovers after they are cooled completely in an airtight freezer-friendly container for up to 2 months.
Another way to freeze these turnovers is to make the filling and make the turnover triangles, and before baking, place the unbaked turnovers in an airtight container or in a ziplock bag, and freeze for up to 2 months.
When you are ready to use the turnovers, take them out of the freezer on a parchment paper-lined baking sheet, brush egg wash on top, and brown sugar, and bake at a 200c (400f) preheated oven for 20-25 minutes until golden brown.
Reheating
Reheat these in a toaster oven or regular oven at 150c (300f) for about 5 minutes (keep an eye so they won't burn) until they are nice and crispy.
Substitutions
Egg wash- to make this vegan, swap the egg wash with vegan milk or vegan heavy cream!
Puff pastry- you can swap the store-bought puff pastry and use a homemade puff pastry if needed!
Gluten-free- you can make this recipe gluten-free by swapping the puff pastry with gluten-free puff pastry. You can make homemade ones or use store-bought!
Variations
Fruit- you can use any of your favorite fruit or berry for this recipe! Swap the strawberries with cherries, raspberries, blueberries, peaches, etc.
