Think of these apple cheesecake buns as a danish, but built with the ultra-pillowy enriched dough I use for my cinnamon rolls.

Why This Recipe Works
- Enriched Bread-Flour Dough: Uses high-protein bread flour and whole milk to develop a strong, stretchy gluten dough, creating an incredibly soft and fluffy crumb.
- Simmered Apple Filling: Pre-cooking the diced apples with butter, brown sugar, and warm spices concentrates their flavor and prevents excess moisture from leaking into the dough.
- Rich Cheesecake Center: A smooth, tangy cream cheese layer adds a delicious creamy texture and balances the sweet fruit.
- Buttery Streusel Crunch: A crumb topping adds essential texture contrast against the soft dough and tender fruit.
Ingredients
Before you start, measure and prepare your ingredients so the process runs smoothly. Full measurements are in the recipe card below.
For the Dough
Bread Flour: Provides the necessary gluten structure for a chewy, lofty bun.
Instant Yeast: Fast-acting yeast that speeds up the rise time without needing prior activation in water.
Granulated Sugar: Feeds the yeast and lightly sweetens the dough.
Kosher Salt: Enhances the overall flavor profile of the bread.
Vanilla Extract: Adds warmth and aromatic depth to the dough.
Whole Milk: Warmed to 100°F–110°F to activate the yeast without killing it.
Eggs: Room-temperature large eggs add structure and richness.
Unsalted Butter: Melted and cooled. Adds rich fat content to tenderize the crumb.
For the Cream Cheese Filling
Cream Cheese: Softened block cream cheese for a smooth, stable cheesecake layer.
Powdered Sugar: Sweetens and thickens the filling without leaving a grainy texture.
For the Apple Filling
Apples: Peeled, cored, and diced apples (such as Honeycrisp or Granny Smith) that hold their shape while baking.
Brown Sugar: Adds a caramel-like sweetness to the fruit.
Cinnamon & Vanilla: Classic warming spices that elevate the apple flavor.
Instructions
Make the Dough
In a large mixing bowl, combine the bread flour, instant yeast, and granulated sugar. Then add the salt and mix.
Add the warm milk, room-temperature eggs, vanilla extract, and melted, cooled butter. Mix until a shaggy dough forms.
Knead the dough on a floured surface or in a stand mixer fitted with the dough hook attachment for 8–10 minutes until smooth and elastic.
Cover the bowl with a damp towel and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.
Prepare the Fillings and Streusel
Cream Cheese Filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until completely smooth and creamy.
Apple Filling: Peel and dice the apples into small, uniform cubes. Melt the butter in a saucepan over medium heat.
Add the apples, brown sugar, lemon juice, spices, salt, and a splash of water. Cover and simmer over medium-low heat for 5–7 minutes, until the apples are tender but still hold their shape.
Dissolve the cornstarch in a tablespoon of cold water, stir into the apple mixture, and cook for 1 minute until thickened and glossy. Remove from heat and cool completely.
Streusel Topping: In a small bowl, stir together the flour, brown sugar, cinnamon, and salt. Pour in the melted butter and mix with a fork until coarse crumbs form.
Assemble and Bake
Punch down the risen dough and divide it into equal portions (yielding 12 buns). Roll each portion into a smooth ball and place them on a parchment-lined baking sheet.
Preheat your oven to 180°C (350°F). Press a deep indentation into the center of each dough ball using the bottom of a glass or your hands, creating a well with a raised border.
Brush the raised dough borders with a beaten egg wash. Pipe or spoon the cream cheese filling into the center of each well, then top with the spiced apple mixture.
Generously scatter the streusel topping over the apples and edges of the dough.
Bake the buns for 20–25 minutes, until the dough is golden brown and the streusel is crisp. Cool slightly before serving.
Expert Tips
- Use Room-Temperature Ingredients: Ensure your eggs and cream cheese are at room temperature to prevent lumps in your filling and ensure even dough incorporation.
- Choose the Right Apples: Firm baking apples like Honeycrisp, Braeburn, or Granny Smith hold up best and won't turn to mush during the baking process.
- Create Deep Wells: Press firmly when creating the center indentation so the dough holds an ample amount of cream cheese and apples without spilling over.
Troubleshooting
- The dough isn't rising: Check that your milk wasn't too hot (which kills the yeast) and that your instant yeast is fresh.
- Filling leaked out during baking: Make sure the raised edges of your dough buns are pinched high enough to create a secure barrier around the cream cheese and apples.
- Streusel is too powdery: If your crumble is too dry, add a tiny extra splash of melted butter until the mixture clumps together nicely.
Frequently Asked Questions
No, instant yeast is fast-acting and speeds up the rise time without needing prior activation in water.

Yes, all-purpose flour works as a substitute, though the final crumb will be slightly less chewy.
Storing
Keep leftover buns in an airtight container in the refrigerator for up to 3 days due to the dairy filling. Reheat gently in the microwave or oven before eating.
Freezing
Wrap baked buns tightly and freeze for up to a month. Freezing works best without fillings, but tightly sealed filled buns freeze fine too.
Substitutions
Dairy-Free Options: Use plant-based butter, dairy-free milk, and vegan cream cheese alternatives if needed.
Sugar Swap: Coconut sugar can replace brown sugar in the apple and streusel mixtures for a caramel-like depth.
Make It Ahead Of Time
Overnight Assembly: Assemble the buns completely on the baking sheet the night before, cover them tightly, and keep them in the refrigerator for up to 16 hours. In the morning, let them come to room temperature and finish their final rise until puffy before baking.
Component Prep: You can cook the apple compote up to 2 days in advance, store it in an airtight container in the fridge, and bring it to room temperature before using.
Variations
Caramel Drizzle: Drizzle homemade or store-bought salted caramel sauce over the baked streusel top once cooled.
Nutty Crunch: Fold chopped pecans or walnuts into the streusel topping for an extra layer of texture.
Serving Tips
Warm and Fresh: Serve these buns slightly warm so the cream cheese filling is velvety and the streusel remains crisp.
Coffee Pairing: Pair with a hot latte or black coffee to balance the rich sweetness of the pastry.

- Bake the buns for 20–25 minutes, until the dough is golden brown and the streusel is crisp. Cool slightly before serving.
Notes
- Storage: Keep leftover buns in an airtight container in the refrigerator for up to 3 days due to the dairy filling. Reheat individual buns in the microwave for 15–20 seconds or in a 180°C (350°F) oven to restore their soft center.
- Freezing (Baked): Wrap baked, un-iced buns tightly and freeze for up to 1 month. Thaw overnight and warm in the oven before serving.
- Freezing (Unbaked): Assemble and shape the buns, freeze them on a baking sheet until solid, and transfer them to a freezer-safe bag for up to 1 month. Thaw overnight in the fridge and let them finish rising before baking.
- Overnight Rise: Assemble the buns completely on the baking sheet the night before, cover them tightly, and refrigerate for up to 16 hours. Let them come to room temperature and finish their final rise in the morning before baking.
- Flour Measurement: Weigh your flour or use the spoon-and-level method to avoid packing too much flour into the dough, which can lead to dense buns.
- Temperature Control: Keep your milk between 100°F–110°F to properly activate the yeast without killing it. Ensure your eggs and cream cheese are at room temperature for smooth mixing.
- Apple Choice: Stick to firm baking varieties like Granny Smith or Honeycrisp so the fruit holds its shape and doesn't release excess liquid into the dough.
