This vegetarian pasta goats cheese is our spin on the viral “baked feta pasta” that went viral in Finland and made the grocery stores in Finland run out of feta cheese.

This baked creamy pasta is made with cherry tomatoes, feta cheese, fresh basil, baby spinach, mushrooms, balsamic vinegar, garlic, olive oil, and spices.

Ingredients
Before you start to make this goat cheese pasta recipe, measure and prepare your ingredients so the cooking process will go smoothly and easily.

Goat cheese- use a block of goat cheese for this recipe. use your favorite brand and kind of goat cheese, most will work great.
Cherry tomatoes- use the best quality cherry tomatoes that you can find. Cherry grape tomatoes are extra flavorful, also cherry Roma tomatoes are very flavorful.
Baby spinach- we used baby spinach for this recipe, but regular spinach will work great as well.
Mushrooms- we used champignon mushrooms for this recipe, but you can use any of your favorite mushrooms.
Cooked pasta- we used Casarecce and Rotini pasta in this recipe, but you can use any kind of pasta that you’d like.
Balsamic vinegar- adds a delicious flavor.
Olive oil- we used extra virgin olive oil for this recipe.
Salt- we like to use kosher salt for this recipe.
Black pepper- for flavor.
Fresh basil- adding fresh basil makes this dish extra flavorful and it gives it a fresh aroma.
Dried oregano- we used dried oregano for this recipe.
Fresh garlic- use your favorite kind of fresh garlic.
If you like your pasta a little bit spicy, add ⅓ teaspoon of chili flakes/ red pepper flakes.
Instructions
Preheat the oven to 200c (400f). Add the cherry tomatoes, mushrooms, spinach, and garlic to an oven-friendly baking dish.
Toss the cherry tomatoes, mushrooms, garlic, and spinach with balsamic vinegar, olive oil, salt, black pepper, and oregano.
Add a block of goat cheese to the middle of the dish and place all the cherry tomatoes around it. Drizzle 1 tablespoon of olive oil on top of the block of goat cheese and sprinkle it with chili flakes and oregano.
Bake in a preheated oven for 20-30 minutes or until the tomatoes are cooked through and the block of goat cheese is softened.
Cook the pasta with a tablespoon of kosher salt. Wash it with cold water to prevent it from overcooking and set it aside.
Remove the baking dish from the oven and mash the goat cheese block with a fork, then mix it with the tomatoes until a creamy goat cheese pasta sauce forms.
Add the fresh basil and the cooked pasta, and mix well. Serve hot as a vegetarian dinner or as a side dish next to your favorite protein!

This can be solved easily when cooking the pasta, save some pasta water, and add it if needed.
A block of goat cheese is the ultimate way to make this recipe, although, crumbled goat cheese can work as well. Keep an eye on it when it’s in the oven, crumbled goat cheese burns faster.
We made this pasta dish with casarecce and Rotini pasta, but any kind of pasta is supposed to work great for this recipe. Try to use short pasta for the best results.

Freezing
If you would like to freeze this pasta dish, you totally can! Simply make it according to the instructions, let it cool to room temperature, and either place it in an airtight container or cover it with plastic wrap.
Freeze for up to 2 months. Make sure that you are using a freezer-friendly container to keep it fresh.
Reheating
Reheat this pasta dish either in the microwave in small portions or the whole dish in a 180c (350f) preheated oven for about 8-10 minutes or until the cheese is bubbly.
Serving tips
Serve this pasta next to air fryer garlic bread and my bruschetta with mozzarella. This makes the most delicious and satisfying dinner.

Pasta kinds- You can use any kind of your favorite pasta kinds and pasta shapes, like chickpea pasta, brown rice pasta, spinach pasta, quinoa pasta, etc.
Vegan- It is very easy to make this recipe vegan, simply replace the goat cheese with vegan goat cheese.

Ingredients
- 400 g Pasta

- 500 g Cherry tomatoes
- 100 g Mushrooms
- 1 cup Baby spinach
- 200 g Goat cheese
